Ingredients

  • For the Mascarpone Topping:
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 5 tablespoons powdered sugar
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (165°C). Lightly grease an 8×8-inch baking dish and set it aside.
  2. Mix the Wet Ingredients (for Brownies): In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined. Stir in the vegetable oil and cocoa powder until the mixture is glossy and smooth.
  3. Add the Dry Ingredients (for Brownies): Gently fold in the flour, instant espresso powder, cornstarch, baking soda, and salt until no streaks of flour remain (be careful not to overmix). Fold in the chopped chocolate until evenly distributed.
  4. Bake the Brownies: Pour the brownie batter into the prepared baking dish and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Don’t overbake!   5. Make the Mascarpone Topping: In a medium bowl, beat the mascarpone cheese, heavy cream, powdered sugar, instant espresso powder, and vanilla extract until soft peaks form. The mixture should be light, fluffy, and spreadable.
  6. Assemble the Brownies: Once the brownies have cooled, spread the mascarpone topping generously over the top. Dust with cocoa powder for an authentic tiramisu finish.
  7. Serve: Slice the brownies into squares and serve. You can refrigerate the brownies until ready to serve, allowing the mascarpone topping to set for even better flavor!
