Ingredients

  • 1 package brownie mix, prepared according to package instructions
  • 12 ounces mascarpone cheese
  • 2 tablespoons cocoa powder
  • 1 teaspoon ground instant espresso
  • ¾ cup powdered sugar
  • 1½ cups cold heavy cream
  • ½ cup strong brewed coffee, cooled
  • Cocoa powder, for dusting

Instructions

  1. Prepare the brownie mix according to package instructions. Let the brownies cool completely, then cut into 1-inch cubes.
  2. In a mixing bowl, combine mascarpone cheese, cocoa powder, ground instant espresso, and powdered sugar. Beat on low speed until just combined.
  3. Add heavy cream and beat on low for 1 minute. Gradually increase speed and beat until medium peaks form. Do not overmix.
  4. To assemble the parfaits, place a few brownie cubes in the bottom of 6 to 8 oz serving glasses. Drizzle with a little brewed coffee.
  5. Add about ¼ cup of the mascarpone cream mixture. Repeat the layers two more times, ending with a layer of cream.
  6. Dust the tops with cocoa powder before serving.
  7. Chill until ready to serve.

  • For a richer flavor, substitute homemade brownies for boxed mix.
