Ingredients
- 1 package brownie mix, prepared according to package instructions
- 12 ounces mascarpone cheese
- 2 tablespoons cocoa powder
- 1 teaspoon ground instant espresso
- ¾ cup powdered sugar
- 1½ cups cold heavy cream
- ½ cup strong brewed coffee, cooled
- Cocoa powder, for dusting
Instructions
- Prepare the brownie mix according to package instructions. Let the brownies cool completely, then cut into 1-inch cubes.
- In a mixing bowl, combine mascarpone cheese, cocoa powder, ground instant espresso, and powdered sugar. Beat on low speed until just combined.
- Add heavy cream and beat on low for 1 minute. Gradually increase speed and beat until medium peaks form. Do not overmix.
- To assemble the parfaits, place a few brownie cubes in the bottom of 6 to 8 oz serving glasses. Drizzle with a little brewed coffee.
- Add about ¼ cup of the mascarpone cream mixture. Repeat the layers two more times, ending with a layer of cream.
- Dust the tops with cocoa powder before serving.
- Chill until ready to serve.
Notes
- For a richer flavor, substitute homemade brownies for boxed mix.
- Can be made up to 1 day ahead and stored covered in the refrigerator.
- Top with shaved chocolate or chocolate-covered espresso beans for garnish.
