Ingredients
Chicken
- 650 g (1.4 lb) Chicken breast, approx 4 breasts, diced
Spice Mix
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 2 tsp Paprika
- 1/2 tsp Turmeric
- 1/2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1 tsp Garlic granules
- 1/2 tsp Chilli powder (optional)
- 1.5 tsp Salt
- 1/2 tsp Freshly ground black pepper
- Red food colouring (optional)
Marinade
- 1 Lemon, juice only
- 1 tbsp Tomato puree
- 50 g (0.25 cups) Natural yoghurt
Instructions
- Prepare the Marinade: In a bowl, thoroughly mix the ground coriander, cumin, paprika, turmeric, cinnamon, ginger, garlic granules, chili powder if using, salt, black pepper, and optionally red food colouring with the natural yoghurt, lemon juice, and tomato puree to create a vibrant marinade.
- Marinate the Chicken: Add the diced chicken breast pieces to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate to allow the flavors to infuse—ideally for at least 30 minutes but can be longer for more flavor.
- Prepare Skewers: Thread the marinated chicken chunks onto skewers evenly, arranging for easy handling and cooking.
- Cooking in the Air Fryer: Place the chicken skewers carefully into the air fryer basket, spray lightly with oil on top to enhance browning. Cook at 220℃ fan/240℃/Gas Mark 9/400°F for 15-20 minutes, turning halfway through to ensure even cooking. Confirm doneness with a meat thermometer.
- Cooking in the Oven: Preheat the oven to 180℃ fan/200℃/Gas Mark 6/350°F fan. Arrange the skewers on a baking sheet or on a grill rack over a tray for even heat circulation. Lightly spray with oil, then bake for 20-25 minutes, turning halfway through. Check with a thermometer for doneness.
- Cooking on the BBQ: Place the chicken skewers directly on the BBQ rack, spray the tops with a little oil to prevent sticking and aid caramelization. Grill for 15-20 minutes, turning halfway, until no pink remains inside and juices run clear. Use a thermometer to confirm.
- Cooking under the Grill: Position the skewers on a grill tray under high heat. Grill for 15-20 minutes, turning halfway to achieve an even char and ensure chicken is fully cooked.
Notes
- Red food colouring is optional and used to achieve the traditional tandoori color but does not affect taste.
- Marinating time can be extended up to 2 hours for deeper flavor and tenderness.
- Always check chicken is thoroughly cooked by ensuring internal temperature reaches 75°C (165°F).
- Use oil spray sparingly to reduce fat but maintain juiciness and prevent sticking.
