Ingredients

Chicken Wings

  • 2 ½ pounds chicken wings, halved at joint

Seasoning

Garlic Parmesan Sauce

  • 2 tablespoons chopped parsley
  • 4-6 cloves garlic, grated

Instructions

  1. Optional Dry-Brine: Pat the wings dry using paper towels. In a bowl, combine the baking powder, kosher salt, garlic powder, black pepper, and paprika. Toss the wings in the mixture to coat evenly. Place the wings on a wire rack set over a baking sheet and refrigerate uncovered overnight or for at least 45 minutes to an hour. Remove from fridge 30-40 minutes before cooking.
  2. Preheat Oven and Prepare Rack: Position a rack in the upper third of the oven and preheat to 450ºF (230ºC). Line a baking sheet with foil and place a wire rack on top. Spray the rack lightly with cooking spray to prevent sticking.
