Cookie Dough
- ½ cup unsalted butter, softened to room temperature
- ½ cup powdered monk fruit sweetener
- 2 teaspoons pure vanilla extract
- 2 cups almond flour
- ½ teaspoon kosher salt
- ½ cup pecans, chopped
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside to prepare for baking.
- Cream Butter and Sweetener: In a large mixing bowl, beat the softened unsalted butter together with the powdered monk fruit sweetener for 3 to 4 minutes until the mixture is light and fluffy. Then, beat in the pure vanilla extract to combine the flavors.
- Add Dry Ingredients: Add the almond flour and kosher salt to the butter mixture. Beat the ingredients until the dough becomes crumbly and begins to come together.
- Incorporate Pecans: Mix in the chopped pecans on a low setting until the dough forms a cohesive ball. If the dough is too crumbly, you can use your warm hands to help form it together.
- Shape Cookies: Using a 2-tablespoon cookie scoop, drop the dough onto the prepared baking sheet, spacing each about 2 inches apart. Slightly flatten the tops with the palm of your hand or the bottom of a cup for even baking.
- Bake: Bake the cookies in the preheated oven for 11 to 13 minutes, or until the edges start to turn a light golden brown. Remove them from the oven and, if needed, flatten the cookies slightly again while warm.
- Cool: Allow the cookies to cool completely on the baking sheet before serving or storing.

- The cookie dough is crumbly; if it doesn’t come together easily, use warm hands to form the dough into balls.
