Instructions
- Cook the sausage: In a large skillet over medium-high heat, crumble and cook the chicken sausage until it is cooked through and lightly browned, ensuring it develops a rich flavor base for the casserole.
- Sauté vegetables: Add the chopped bell peppers and onion to the skillet and cook for about 5 minutes, stirring often, until the vegetables soften but still retain a slight crispness to add texture.
- Add aromatics & spices: Stir in minced garlic, salt, dried oregano, black pepper, and cumin. Cook for 1 minute until the mixture becomes fragrant, allowing the spices to bloom.
- Deglaze & add liquids: Pour in the low-sodium chicken broth and scrape any browned bits from the bottom of the pan to incorporate full flavor. Then stir in the tomato salsa to add tang and moisture.
- Add rice and simmer: Stir in the rinsed long-grain white rice, mixing well to combine all ingredients evenly. Bring the mixture to a gentle simmer.
- Cook covered: Cover the skillet, reduce the heat to medium-low, and let it simmer for 15–20 minutes, or until the rice is tender and all liquid is absorbed, ensuring the dish is fully cooked.
- Melt cheese topping: Evenly sprinkle the shredded mozzarella cheese over the top of the skillet contents. Cover again and allow the cheese to melt thoroughly before serving, adding a creamy and gooey finish to the casserole.
