Ingredients
- 2 cups (240g) all-purpose flour
- 2 teaspoons (10g) baking powder
- 1 teaspoon (2g) apple pie spice
- 1/2 teaspoon (4g) kosher salt
- 3/4 cup (248g) apple butter
- 1 cup (200g) granulated sugar
- 1/2 cup (122g) spiced apple cider
- 2 large eggs
- 1 1/2 teaspoons (7g) vanilla extract
- 2 tablespoons (25g) granulated sugar (for topping)
- 1/2 teaspoon apple pie spice (for topping)
Instructions
- Preheat oven to 400°F (200°C). Line a muffin tin with 15 paper liners and lightly coat with baking spray.
- In a medium bowl, whisk together flour, baking powder, apple pie spice, and salt. Set aside.
- In a large bowl, whisk apple butter, sugar, and apple cider until smooth. Add eggs and vanilla and whisk until combined.
- Gently fold dry ingredients into wet ingredients with a spatula until just combined (do not overmix).
- Divide batter evenly into muffin cups, about 4 tablespoons each.
- In a small bowl, mix sugar and apple pie spice for the topping. Sprinkle evenly over the muffin batter.
- Bake for 25–28 minutes, until golden brown and a toothpick inserted in the center comes out clean.
- Let muffins cool 15–20 minutes before serving.
Notes
- Do not overmix the batter to keep muffins tender and fluffy.
