Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 teaspoons (10g) baking powder
  • 1 teaspoon (2g) apple pie spice
  • 1/2 teaspoon (4g) kosher salt
  • 3/4 cup (248g) apple butter
  • 1 cup (200g) granulated sugar
  • 1/2 cup (122g) spiced apple cider
  • 2 large eggs
  • 1 1/2 teaspoons (7g) vanilla extract
  • 2 tablespoons (25g) granulated sugar (for topping)
  • 1/2 teaspoon apple pie spice (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a muffin tin with 15 paper liners and lightly coat with baking spray.
  2. In a medium bowl, whisk together flour, baking powder, apple pie spice, and salt. Set aside.
  3. In a large bowl, whisk apple butter, sugar, and apple cider until smooth. Add eggs and vanilla and whisk until combined.
  4. Gently fold dry ingredients into wet ingredients with a spatula until just combined (do not overmix).
  5. Divide batter evenly into muffin cups, about 4 tablespoons each.
  6. In a small bowl, mix sugar and apple pie spice for the topping. Sprinkle evenly over the muffin batter.
  7. Bake for 25–28 minutes, until golden brown and a toothpick inserted in the center comes out clean.
