Ingredients
- 1 cup all-purpose flour
- 1 cup graham cracker crumbs
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup dark brown sugar, packed
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 (7-ounce) jar of marshmallow creme
- 1 cup milk chocolate chips, plus extra for topping
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper or aluminum foil, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine the flour, graham cracker crumbs, baking powder, salt, and cinnamon. Mix until well combined.
- In a large bowl, beat the softened butter and dark brown sugar together using a hand mixer until smooth and creamy.
- Add the egg and vanilla extract, then mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until smooth and creamy.
- Press about 2/3 of the cookie dough into the prepared baking pan, spreading it evenly across the bottom.
- Spread a layer of marshmallow creme over the cookie dough, then sprinkle the chocolate chips evenly on top.
- Gently place pieces of the remaining cookie dough on top of the chocolate chips.
- Optionally, sprinkle roughly chopped graham crackers, extra chocolate chips, or mini marshmallows on top for extra texture and flavor.
- Bake for 26-28 minutes, or until golden brown and bubbly.
- Remove from the oven and let cool completely before slicing into bars.
Notes
- For extra texture, you can sprinkle mini marshmallows on top of the cookie bars before baking.
- If you prefer a more intense chocolate flavor, use dark chocolate chips in place of milk chocolate chips.
- These bars can be stored in an airtight container for up to 5 days.
