These Easy S’mores Cookie Bars combine everything you love about s’mores in a soft, chewy cookie bar. With graham cracker crumbs, a gooey marshmallow swirl, and melty chocolate chips, they’re a delicious treat that’s sure to please!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup dark brown sugar, packed
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 (7-ounce) jar of marshmallow creme
  • 1 cup milk chocolate chips, plus extra for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper or aluminum foil, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the flour, graham cracker crumbs, baking powder, salt, and cinnamon. Mix until well combined.
  3. In a large bowl, beat the softened butter and dark brown sugar together using a hand mixer until smooth and creamy.
  4. Add the egg and vanilla extract, then mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until smooth and creamy.
  6. Press about 2/3 of the cookie dough into the prepared baking pan, spreading it evenly across the bottom.
  7. Spread a layer of marshmallow creme over the cookie dough, then sprinkle the chocolate chips evenly on top.
  8. Gently place pieces of the remaining cookie dough on top of the chocolate chips.
  9. Optionally, sprinkle roughly chopped graham crackers, extra chocolate chips, or mini marshmallows on top for extra texture and flavor.
  10. Bake for 26-28 minutes, or until golden brown and bubbly.
  11. Remove from the oven and let cool completely before slicing into bars.

Notes

  • For extra texture, you can sprinkle mini marshmallows on top of the cookie bars before baking.
  • If you prefer a more intense chocolate flavor, use dark chocolate chips in place of milk chocolate chips.
  • These bars can be stored in an airtight container for up to 5 days.
