A tender and flavorful whole chicken slow-cooked with garlic butter and lemon for a juicy, aromatic meal, with an optional crispy skin finish.

Ingredients

  • For the Chicken:
  • 1 (4-5 lb) whole chicken
  • ½ cup butter, softened
  • 8 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground pepper

Instructions

  1. Prepare the Chicken: Remove the inner parts from the chicken and pat the chicken dry with a paper towel. Make 4 large aluminum foil balls and place them at the bottom of the slow cooker.
  2. Make the Garlic Butter: In a small bowl, mix together the softened butter, minced garlic, lemon zest and juice, salt, and pepper until well combined.
  3. Prepare the Chicken: Lift the skin of the chicken from the breast using a spoon. Place about 1 tablespoon of garlic butter under the skin on both sides of the breast. Rub the remaining garlic butter all over the outside of the chicken.
  4. Cook the Chicken: Place the chicken on the foil balls in the slow cooker. Place sliced lemon along the sides of the chicken. Cook on high for 4 to 4 ½ hours or on low for 7 to 8 hours, or until the internal temperature reaches 165°F.
  5. Optional Step for Crispy Skin: If your slow cooker has a removable insert that is oven-safe, transfer the chicken to the oven and broil for 4-5 minutes to crisp the skin. You can also flip the chicken and broil the other side for another 4-5 minutes. If your slow cooker’s insert isn’t oven-safe, transfer the chicken to a sheet pan and broil in the oven for 4-5 minutes.
  6. Rest and Serve: Let the chicken rest for 10 minutes before carving. Drizzle the juices over the cut-up chicken before serving.

Notes

  • For extra flavor, you can add fresh herbs like rosemary or thyme under the skin with the garlic butter.
  • Feel free to use your favorite seasoning in place of the kosher salt and pepper, such as garlic powder or paprika.
