This Simple Pomodoro Sauce is a classic Italian pasta sauce, rich and flavorful, made from fresh ripe Roma tomatoes, olive oil, aromatic herbs, onion, and garlic. It’s an easy-to-make homemade sauce that delivers authentic taste, perfect for serving over your favorite pasta dishes. Ingredients

Tomatoes

  • 3 pounds fresh Roma tomatoes (about 12 tomatoes)

Vegetables and Herbs

  • ⅓ cup fresh herbs (a combination of basil and oregano recommended)
  • ⅓ cup finely diced or grated onion
  • 6 large garlic cloves, finely minced

Other Ingredients

  • 6 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: pinch of sugar

Instructions

  1. Prepare the tomatoes: Quarter the Roma tomatoes and lightly scrape out most of the seeds. There’s no need to remove all seeds unless you particularly dislike them. Place the prepared tomatoes in a food processor in two batches and puree until only small chunks remain.
  2. Strain the tomato puree: Position a fine mesh sieve over a large bowl and pour the tomato puree into it. This will separate the excess liquid from the pulp. Reserve the liquid as it can be added back later if the sauce needs thinning.
  3. Sauté aromatics: Heat olive oil in a large saucepan over medium heat. Add the finely diced onion and minced garlic, sautéing for about 5 minutes until softened and fragrant.
  4. Combine and simmer: Add the tomato pulp, ½ cup of the reserved tomato liquid, and the fresh herbs into the saucepan. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently, partially covered, for 1 hour. Stir occasionally and add more reserved tomato liquid if you prefer a thinner sauce.
  5. Season and serve: After simmering, remove the sauce from heat and season with salt and pepper to taste. Add a pinch of sugar if desired to balance acidity. Serve hot over your favorite pasta and enjoy!

Notes

  • Removing all tomato seeds is optional; a few seeds won’t affect the sauce negatively.
  • The reserved tomato liquid can be used to adjust the sauce’s consistency during cooking.
  • Fresh herbs like basil and oregano are recommended, but you can use other herbs according to preference.
