Ingredients
- For the Muffins:
- 1 pound turkey sausage
- 2 cups all-purpose flour (spooned and leveled)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup shredded Pepper Jack cheese
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 large egg
- 1/4 cup pure maple syrup (plus extra for brushing tops)
- 6 tablespoons butter, melted and slightly cooled
- For the Gravy:
- 2 tablespoons butter
- 2 1/4 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Spray a muffin tin with nonstick spray.
- In a skillet over medium-high heat, cook sausage until browned and fully cooked, breaking it up with a spoon. Drain on a paper towel-lined plate. Set skillet aside for gravy.
- In a large bowl, whisk together flour, baking powder, and salt.
- Add cooked sausage and both cheeses to the dry ingredients and mix.
- In a separate bowl, whisk milk, egg, maple syrup, and melted butter.
- Combine wet and dry mixtures, stirring just until incorporated.
- Scoop batter evenly into muffin tin and bake for 18–20 minutes, or until a toothpick comes out clean.
- Optional: Brush muffin tops with extra maple syrup after baking.
- To Make the Gravy: In the reserved skillet, melt butter over medium heat. Add milk, salt, and pepper. Whisk continuously until heated through and slightly thickened, about 5–7 minutes.
Notes
- Make muffins ahead and reheat; prepare gravy fresh when serving.
- Gravy can be flavored with a pinch of sage or thyme for added depth.
