Instructions

  1. Preheat oven to 375°F. Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl or stand mixer, cream together butter, brown sugar, and granulated sugar for 2–3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract. Add pumpkin puree and mix until well combined.
  4. In a separate bowl, whisk together flour, oats, pumpkin pie spice, cornstarch, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until fully combined.
