Ingredients
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp pumpkin pie spice
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tbsp vanilla extract
- 2 cups chocolate chips, semi-sweet or milk chocolate
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
- In a separate bowl, whisk together the pumpkin puree, vegetable oil, sugar, brown sugar, egg, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and whisk until no more flour is visible and the batter is thick and sticky.
- Fold in the chocolate chips.
- Drop about 2 tablespoons of batter onto the prepared baking sheet, spacing them at least 2 inches apart.
- Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean. Thicker cookies may need a little more time.
- Let cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
Notes
- Store cookies in an airtight container, separating layers with parchment paper to prevent sticking.
- Use semi-sweet or milk chocolate chips based on your sweetness preference.
- Don’t overbake to keep them soft and moist.
