A quick and healthy protein tortilla recipe made with all-purpose flour and protein-rich Skyr yogurt, perfect for wraps or tacos. These tortillas are easy to make at home using simple ingredients and cooked on a stovetop skillet for soft, pliable, and delicious results.

  • Total Time: 17 minutes
  • Yield: 8 tortillas (serving 4)

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • ¾ teaspoon salt

Wet Ingredients

  • ½ cup plain Skyr yogurt (or Greek yogurt)
  • ¼ cup water (+ more as needed)

Other

  • Cooking spray (for skillet)

Instructions

  1. Mix Ingredients: Add the all-purpose flour, plain Skyr yogurt, and salt to a large bowl. Using a silicone or wooden spoon, stir until the mixture is combined. Gradually add water, starting with 1 tablespoon at a time, until the dough starts to form a ball.
  2. Knead Dough: Transfer the dough to a floured work surface and knead it until it becomes smooth. If the dough feels too sticky, sprinkle additional flour as needed to prevent sticking.
  3. Divide and Shape: Divide the smooth dough into 8 equal pieces. Roll each piece into a ball. Lightly flour the work surface, then use a rolling pin to roll out each dough ball into a paper-thin circle, dusting with more flour as needed to prevent sticking.
  4. Preheat Skillet: Heat a large cast iron skillet over medium heat and spray it lightly with cooking spray to prevent sticking.
  5. Cook Tortillas: Place one rolled-out tortilla onto the hot skillet. Cook until it begins to bubble, about 1 minute. Spray the top of the tortilla lightly with cooking spray, then flip it and cook for an additional 30 seconds to 1 minute until fully cooked.
  6. Serve and Store: Remove the cooked tortilla from the skillet and place it in a folded cloth towel to keep warm and moist. Repeat the cooking process for the remaining tortillas.

Notes

  • Use Skyr yogurt or Greek yogurt for a higher protein content.
  • Add water gradually to avoid a sticky dough.
  • Properly preheat the skillet to ensure even cooking and puffing.
  • Keep cooked tortillas wrapped in a cloth towel to stay soft and pliable.
  • These tortillas can be refrigerated in an airtight container for up to 3 days, or frozen up to 1 month.
