Instructions
- Mix Ingredients: Add the all-purpose flour, plain Skyr yogurt, and salt to a large bowl. Using a silicone or wooden spoon, stir until the mixture is combined. Gradually add water, starting with 1 tablespoon at a time, until the dough starts to form a ball.
- Knead Dough: Transfer the dough to a floured work surface and knead it until it becomes smooth. If the dough feels too sticky, sprinkle additional flour as needed to prevent sticking.
- Divide and Shape: Divide the smooth dough into 8 equal pieces. Roll each piece into a ball. Lightly flour the work surface, then use a rolling pin to roll out each dough ball into a paper-thin circle, dusting with more flour as needed to prevent sticking.
- Preheat Skillet: Heat a large cast iron skillet over medium heat and spray it lightly with cooking spray to prevent sticking.
- Cook Tortillas: Place one rolled-out tortilla onto the hot skillet. Cook until it begins to bubble, about 1 minute. Spray the top of the tortilla lightly with cooking spray, then flip it and cook for an additional 30 seconds to 1 minute until fully cooked.
- Serve and Store: Remove the cooked tortilla from the skillet and place it in a folded cloth towel to keep warm and moist. Repeat the cooking process for the remaining tortillas.
