Ingredients
Cookie Dough
- 170g butter, softened
- 280g dark brown sugar
- 1 large, free range egg
- 400g plain flour
- 1.5 tsp baking powder
- 1 tsp vanilla extract
- 350g plain chocolate chips, divided
- 200g unsalted pistachios, chopped
Pistachio Creme
- As much pistachio creme as desired for layering
Instructions
- Preheat and Prepare Tin: Preheat the oven to 175°C (350°F). Grease and line a 9×9 inch square baking tin to prevent the bars from sticking.
- Mix Butter and Sugar: In an electric mixer bowl, combine the softened butter, dark brown sugar, and vanilla extract. Beat for 3-5 minutes until the mixture is light, fluffy, and well incorporated.
- Add Egg: Add the large egg to the mixture. Scrape down the sides of the bowl to ensure all ingredients mix evenly, then continue blending until combined.
- Combine Dry Ingredients and Mix: Add the plain flour, baking powder, 250g of chocolate chips, and chopped pistachios to the mixing bowl. Mix gently until just combined, forming a thick cookie dough.
- Layer Dough and Creme: Using lightly floured hands, press half of the dough evenly into the prepared baking tin. Spoon generous amounts of pistachio creme on top of this layer. Then, spread the remaining dough over the creme, flattening the top gently, allowing some creme to peek through.
- Add Remaining Chocolate Chips and Bake: Sprinkle the remaining 100g of chocolate chips evenly across the top. Bake in the preheated oven for about 25 minutes or until the bars turn golden brown on top.
- Cool and Serve: Allow the cookie bars to cool in the tin for 15 minutes to set. Carefully remove them and transfer to a wire rack to cool completely before cutting into 16 squares. Enjoy these rich, nutty, and chocolatey treats!
