Ingredients
- For the Beef Mixture:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 1 ½ lbs lean ground beef
- ½ cup assorted bell peppers, finely chopped
- ½ cup green peppers, finely chopped
- Salt, to taste
- ½ tsp black pepper
- 1 tsp paprika
- 2 cloves garlic, minced
- For the Phyllo Rolls:
- 1 lb phyllo dough, thawed
- 1 cup melted butter
- ⅓ cup milk
- 1 large egg
- Pinch of black pepper
- Pinch of salt
Instructions
- Cook the Beef Mixture: In a medium saucepan, heat olive oil over medium-high heat. Add chopped onions and sauté for 3–4 minutes until translucent. Add the ground beef and crumble it with a wooden spoon as it cooks. Continue cooking until browned. Stir in the chopped bell peppers, green peppers, salt, black pepper, paprika, and minced garlic. Cook for another 2–3 minutes until fragrant. Set aside to cool for about 20 minutes.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare Phyllo Dough: Lay out phyllo dough on a large cutting board. Cover with a damp towel to keep it from drying out. Place one sheet of phyllo on a flat surface, layer another sheet on top, and brush both sheets with melted butter.
- Assemble the Rolls: At the bottom edge of the buttered phyllo, spread ½ cup of the ground beef mixture in a horizontal strip. Roll up the phyllo dough tightly, creating one long roll. Place in a well-buttered 13×9-inch baking dish. Repeat the process with the remaining phyllo sheets, creating 7–8 rolls in total. Slice each roll into four pieces across the dish.
- Partially Bake: Bake the rolls in the preheated oven for 15 minutes.
- Prepare the Egg Mixture: While the rolls are baking, whisk together milk, egg, salt, and black pepper in a bowl.
- Finish Baking: After 15 minutes, remove the rolls from the oven and brush the egg mixture over the rolls. Return to the oven and bake for another 15–20 minutes, or until the top is golden brown.
