Ingredients
- 8.8-ounce box of rice noodles (Pad Thai noodles)
- 1/2 cup creamy peanut butter
- 1/2 cup water
- 1/4 cup low-sodium soy sauce
- 3 tablespoons brown sugar
- 1 1/2 tablespoons fresh lime juice (about 1 lime)
- 2 teaspoons toasted sesame oil
- 1 tablespoon grated fresh garlic (2 large cloves)
- 1–2 teaspoons sriracha (adjust to taste)
- Optional Garnishes:
- 1 teaspoon sesame seeds
- 1–2 tablespoons scallions, thinly sliced
- 1–2 tablespoons lightly salted peanuts, chopped
Instructions
- In a large pot of boiling water, cook the rice noodles according to the package instructions (approximately 5-7 minutes).
- While the noodles are boiling, prepare the peanut sauce. In a medium bowl, whisk together the creamy peanut butter, water, soy sauce, brown sugar, lime juice, sesame oil, grated garlic, and sriracha until smooth. Set aside.
- Once the rice noodles are done, drain the water from the noodles. If needed, reserve some of the hot cooking water to thin the sauce.
- Transfer the hot cooked noodles to a large bowl and toss them with the peanut sauce, making sure they are well-coated.
- Garnish with any or all of the optional toppings, such as sesame seeds, scallions, and chopped peanuts. Serve while hot.
Notes
- If you prefer a spicier dish, increase the amount of sriracha or add chili flakes to taste.
- For added texture, you can sprinkle roasted peanuts on top as a garnish.
- This dish can be served warm or at room temperature, making it great for meal prep.
