These easy and quick Peanut Noodles are a flavorful midweek meal that tastes even better than takeout. Rice noodles tossed in a creamy peanut sauce make for a satisfying and delicious dish in just 10 minutes!

Ingredients

  • 8.8-ounce box of rice noodles (Pad Thai noodles)
  • 1/2 cup creamy peanut butter
  • 1/2 cup water
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons fresh lime juice (about 1 lime)
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon grated fresh garlic (2 large cloves)
  • 12 teaspoons sriracha (adjust to taste)
  • Optional Garnishes:
  • 1 teaspoon sesame seeds
  • 12 tablespoons scallions, thinly sliced
  • 12 tablespoons lightly salted peanuts, chopped

Instructions

  1. In a large pot of boiling water, cook the rice noodles according to the package instructions (approximately 5-7 minutes).
  2. While the noodles are boiling, prepare the peanut sauce. In a medium bowl, whisk together the creamy peanut butter, water, soy sauce, brown sugar, lime juice, sesame oil, grated garlic, and sriracha until smooth. Set aside.
  3. Once the rice noodles are done, drain the water from the noodles. If needed, reserve some of the hot cooking water to thin the sauce.
  4. Transfer the hot cooked noodles to a large bowl and toss them with the peanut sauce, making sure they are well-coated.
  5. Garnish with any or all of the optional toppings, such as sesame seeds, scallions, and chopped peanuts. Serve while hot.

Notes

  • If you prefer a spicier dish, increase the amount of sriracha or add chili flakes to taste.
  • For added texture, you can sprinkle roasted peanuts on top as a garnish.
  • This dish can be served warm or at room temperature, making it great for meal prep.
