Ingredients
- 1/2 cup unsalted creamy peanut butter (natural, drippy kind)
- 1/3 cup pure maple syrup
- 1/3 cup avocado oil or coconut oil
- 1 teaspoon vanilla extract
- 2 cups old-fashioned rolled oats
- 1/2 cup quick oats
- 2 tablespoons chia seeds
- 1/4 teaspoon fine sea salt
Instructions
- Preheat oven to 325ºF (160ºC) and set aside a medium baking sheet.
- In a large bowl, mix together the peanut butter, maple syrup, oil, and vanilla extract until smooth.
- Add in the rolled oats, quick oats, chia seeds, and sea salt. Stir with a sturdy spatula or wooden spoon until all oats are well coated (use your hands if needed).
- Spread the granola mixture evenly onto the baking sheet in one layer.
- Bake for 15 minutes, then gently flip the granola with a flat spatula and bake for another 10–15 minutes, or until golden brown.
- Remove from oven and allow the granola to cool on the baking sheet for 20 minutes — it will crisp up as it cools.
- Serve with milk, yogurt, or enjoy as a snack. Store in an airtight container for up to 2 weeks.

- Use natural, drippy peanut butter for easier mixing and better texture.
- Cool completely before storing to maintain crispiness.
- Add chocolate chips, dried fruit, or nuts after baking for added variety.
