Instructions

- Shape Bites: Using a spoon, drop 12 dollops of the yogurt mixture onto a parchment-lined baking sheet. Spread each dollop slightly to form rounds the size of a cookie. Sprinkle each with roasted salted peanuts on top. Then freeze the tray for about 1 to 2 hours until the bites are completely solidified.
- Melt Chocolate: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave the mixture in 30-second intervals, stirring well after each, until the chocolate is fully melted, smooth, and glossy.
- Dip Bites: Remove the frozen yogurt bites from the freezer. One at a time, dip each bite into the melted chocolate, ensuring it is fully coated with a smooth layer of chocolate.
- Add Toppings: While the chocolate coating is still wet, immediately sprinkle each bite with chopped roasted peanuts and a pinch of sea salt to add texture and flavor contrast.
- Final Freeze: Place the chocolate-coated bites back onto the parchment-lined baking sheet and freeze for an additional hour or until the chocolate shell is firm and set, ready to enjoy.
