Instructions
- Preheat and prepare pan. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper or grease it thoroughly to prevent sticking, then set aside.
- Melt butter and mix with peanut butter and sugar. In a large microwave-safe bowl, melt the 6 tablespoons of unsalted butter by microwaving for about 1 minute. Stir in the peanut butter until fully melted and mixed evenly with the butter. Whisk in the brown sugar using a fork or whisk until combined.
- Add egg and vanilla. Whisk in the egg and vanilla extract thoroughly until the mixture is smooth and well combined.
- Combine dry ingredients. Add the all-purpose flour, baking soda, and salt to the wet mixture. Stir everything together until the batter is evenly combined without overmixing.
- Press batter into pan and add topping. Spread and press the batter evenly into the prepared baking pan using your hands or a spatula to create a smooth, even layer. Sprinkle chopped peanuts on top if desired for added texture and flavor.
- Bake and cool. Bake the blondies for 22 to 24 minutes, or until the edges turn golden brown and the bars look slightly puffed. Remove from oven and allow to cool completely before cutting into 16 two-inch squares to serve.

- Using natural or creamy peanut butter works best for the smooth texture of these blondies.
- Do not overbake; the blondies will continue to set as they cool, ensuring a chewy texture.
