Ingredients

  • 1 sheet puff pastry (thawed)
  • 2 tsp cinnamon
  • ⅓ cup brown sugar
  • 1 tbsp cornstarch
  • 45 medium peaches, sliced ⅓ inch thick
  • 1 large egg (whisked)
  • 2 tbsp coarse granulated sugar
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Puff Pastry: Roll out the puff pastry just enough to fit the bottom of a 10-inch oven-safe skillet. Gently press it into the base and slightly up the sides. Refrigerate while preparing the filling.
  3. Make the Cinnamon-Sugar Mixture: In a small bowl, combine cinnamon, brown sugar, and cornstarch.
  4. Prepare the Galette Base: Sprinkle half of the cinnamon-sugar mixture evenly on the bottom of the puff pastry.
  5. Arrange the Peaches: Arrange the sliced peaches over the cinnamon-sugar mixture in overlapping circles or rows.
  6. Finish with Cinnamon and Fold: Sprinkle the remaining cinnamon mixture over the peaches. Then, fold the edges of the puff pastry slightly over the filling to form a rustic border.
