  • Total Time: 1 hour
  • Yield: 4 servings

Ingredients

Chicken

  • 1 1/2 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (Italian or plain; can add 1 tsp Italian seasoning if using plain)
  • 1/2 tsp cracked pepper
  • 1/2 – 3/4 tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it is hot and ready for roasting the ingredients evenly.
  2. Prepare and partially cook the potatoes: Line a sheet pan with parchment paper or spray it with cooking oil for easy cleanup. In a medium bowl, combine the cut red potatoes with minced garlic, olive oil, grated Parmesan, salt, and pepper. Toss everything together until the potatoes are evenly coated. Spread the potatoes on one third of the sheet pan. Place the pan into the oven and roast for about 10-15 minutes, depending on how browned and crispy you like your potatoes.
  3. Coat the chicken: While the potatoes are roasting, use the same bowl to toss together the chicken breasts with olive oil, minced garlic, grated Parmesan, breadcrumbs, cracked pepper, and sea salt. Make sure the chicken is fully coated to create the Parmesan crust.
  4. Add chicken and green beans to the pan: Remove the sheet pan from the oven. Push the potatoes to one side and add the coated chicken breasts to the pan. Meanwhile, in the same bowl, toss the green beans with olive oil, minced garlic, Parmesan (if using), and salt and pepper. Add the green beans to the remaining space on the sheet pan. Return the pan to the oven.
  5. Bake until chicken is fully cooked: Roast everything together for about 25 minutes or until the internal temperature of the chicken reaches 165°F (74°C). For extra crispy potatoes and a golden crust on the chicken, turn the oven to broil for an additional 4-5 minutes, watching carefully to avoid burning.
  6. Rest and serve: Remove the sheet pan from the oven and allow the food to cool for several minutes. This resting time helps the chicken juices redistribute, ensuring juicy, flavorful meat. Serve and enjoy your simple, nutritious sheet pan dinner!

Notes

  • If you prefer, you can add Italian seasoning to the plain breadcrumbs for extra flavor.
  • Use parchment paper or a silicone mat on the sheet pan to simplify cleanup.
  • Ensure chicken reaches an internal temperature of 165°F for food safety.
  • Broiling at the end is optional but recommended for crispier textures.
  • Adjust the salt and pepper to taste, especially if using salted Parmesan or seasoned breadcrumbs.
  • Fresh green beans can be substituted with other vegetables like asparagus or broccoli if desired.
