Ingredients
- Cooking spray
- 1 cup panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 2 teaspoons dried Italian seasoning
- 1 teaspoon paprika
- 1 egg, whisked
- 4 boneless skinless chicken breasts (about 8 oz each), sliced in half lengthwise to make 8 pieces
- Olive oil, for drizzling
Instructions
- Preheat oven to 450°F (232°C). Lightly coat a large baking sheet with cooking spray.
- In a shallow bowl, combine panko, Parmesan, Italian seasoning, and paprika.
- Whisk the egg in a separate bowl. Dip each chicken piece in the egg to coat completely.
- Dredge each piece in the breadcrumb mixture, pressing gently to adhere the coating.
- Place breaded chicken on the prepared baking sheet and drizzle lightly with olive oil.
- Bake for 15 minutes. Flip each piece and bake for another 10–15 minutes, or until golden and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- Use whole-wheat panko for added fiber.
- Swap Italian seasoning for Cajun spice or taco seasoning for variation.
- Pairs well with mashed potatoes, coleslaw, or a side salad.
