Ingredients

  • For the Chicken:
  • 3 lbs bone-in, skin-on chicken thighs (about 6 pieces)
  • 3 tsp garlic powder
  • 2 tsp onion powder
  • 3 tsp smoked paprika
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • For the BBQ Sauce:
  • ⅓ cup ketchup
  • ⅓ cup low-sodium soy sauce
  • ⅓ cup honey
  • 3 garlic cloves (grated or finely minced)
  • 3 tbsp red onion (grated or finely diced)
  • ½ tsp ginger
  • 1 tsp hot sauce

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Season the Chicken: In a small bowl, combine garlic powder, onion powder, paprika, salt, olive oil, and lemon juice until well mixed. Rub the seasoning mixture evenly on both sides of each chicken thigh. Place the chicken thighs in a 9×13 baking dish.
  3. Bake the Chicken: Bake the chicken in the preheated oven for 20 minutes.
  4. Prepare the BBQ Sauce: In a small bowl, mix together ketchup, soy sauce, honey, garlic, red onion, ginger, and hot sauce until combined.
  5. Add the BBQ Sauce: After the chicken has baked for 20 minutes, remove it from the oven. Spread half of the BBQ sauce evenly on top of each chicken thigh. Return the chicken to the oven and bake for an additional 15 minutes.
  6. Final Coating: After 15 minutes, spread the remaining BBQ sauce on top of the chicken thighs. Bake for another 15 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Rest and Serve: Remove the chicken from the oven and let it rest for 10 minutes before serving. Serve with mashed potatoes or rice for a complete meal!

Notes

  • For extra flavor, marinate the chicken in the seasoning mixture for 30 minutes before baking.
  • You can use boneless, skinless chicken thighs or chicken breasts if preferred, but bone-in, skin-on thighs tend to be juicier and more flavorful.
