Ingredients

Dough

  • 3/4 cup milk
  • 3 tablespoons butter
  • 3 1/4 cups all-purpose flour, divided
  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 package quick-rise yeast (2 1/2 teaspoons)
  • 2 large eggs
  • 1/2 teaspoon vanilla paste

Frying

  • Oil (for frying, about 1 1/2 to 2 inches deep)

Maple Glaze

  • 1/4 cup unsalted butter (1/2 stick)
  • 1/2 cup brown sugar
  • 3 tablespoons milk
  • 1 tablespoon corn syrup
  • 2 teaspoons maple flavoring
  • 2 cups powdered sugar

Instructions

  1. Heat Milk and Butter: In a medium saucepan over medium heat, warm the milk and butter until the butter melts and the mixture is hot but not boiling (approximately 125°F). Remove from heat.
  2. Prepare Dough: Fit a stand mixer with the paddle attachment. Combine 2 1/4 cups of flour, sugar, salt, and yeast in the bowl. On low speed, slowly pour in the hot milk mixture and then increase speed to medium. Beat until mixed well. Add eggs and vanilla paste, beating until fluffy for 2-3 minutes. Add remaining 1 cup flour, beating until smooth but sticky, about 1-2 minutes.
  3. First Rise: Lightly grease a large bowl, transfer dough into it, cover with a clean kitchen towel, and let it rise in a warm spot until almost doubled in size, about 45 minutes.
  4. Prepare Baking Sheets: Line a baking sheet with waxed paper and lightly brush it with oil. Prepare another baking sheet lined with paper towels for draining fried bars.
  5. Shape Bars: Turn the dough onto a generously floured surface. Roll into a 12-by-8-inch rectangle. Cut into 12 bars approximately 4 inches by 2 inches using a sharp knife or pizza cutter. Place bars on the oiled waxed paper. Cover with a towel and allow to rise for 30 minutes.
  6. Fry Bars: Heat oil in a deep fryer or heavy deep-sided skillet to 350°F, ensuring about 1 1/2 to 2 inches of oil depth. Fry 2-4 bars at once without overcrowding, cooking for 1-2 minutes per side until dark golden brown. Drain on paper towel-lined baking sheet. Maintain oil temperature between batches.
  7. Make Maple Glaze: In a small saucepan, combine butter and brown sugar. Add milk and cook over medium heat, stirring frequently, for 3-5 minutes until butter melts and sugar dissolves. Remove from heat and stir in corn syrup and maple flavoring. Gradually whisk in powdered sugar 1/2 cup at a time until smooth. Thin with 1-2 teaspoons milk if needed.
  8. Glaze the Bars: Once fried bars have cooled enough to handle, dip the top side into the maple glaze. Place on a wire rack with the glazed side up and let the glaze set for 10-15 minutes before serving.
