  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings

Ingredients

  • Sweet Potatoes:
  • 4 medium sweet potatoes
  • Olive or avocado oil, for rubbing
  • Salt and pepper, to taste
  • Butter, for serving
  • Ground Beef:
  • 1 pound ground beef
  • 1 tablespoon olive or avocado oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon Worcestershire sauce
  • 1 teaspoon cornstarch
  • 1/4 cup beef broth
  • Hot Honey:
  • 1/4 cup hot honey
  • 1 tablespoon sriracha
  • 1/2 to 1 teaspoon red pepper flakes, to taste
  • 1/2 tablespoon vinegar (white or apple cider)
  • Toppings:
  • Cottage cheese, as needed
  • 1 avocado, thinly sliced or mashed

Instructions

  1. Roast Sweet Potatoes: Wash and pierce each sweet potato several times with a fork. Rub with oil, season with salt and pepper, and air fry at 400°F for 45–50 minutes, flipping halfway, until tender.
  2. Cook Ground Beef: Heat oil in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add ground beef and cook for 6–8 minutes until browned. Stir in onion powder, chili powder, paprika, salt, pepper, Worcestershire sauce, and cornstarch. Pour in beef broth and simmer for 3–5 minutes until thickened.
  3. Make Hot Honey: In a small bowl, whisk together hot honey, sriracha, red pepper flakes, and vinegar. Set aside.
  4. Assemble: Slice open each baked sweet potato and add a small amount of butter. Mash lightly inside to mix. Top with a generous spoonful of ground beef, a dollop of cottage cheese, and slices or mash of avocado. Drizzle with hot honey mixture and serve warm.

Notes

  • Use Greek yogurt instead of cottage cheese for a tangier, high-protein option.
  • You can bake sweet potatoes in the oven at 400°F for about 1 hour if no air fryer is available.
  • Adjust hot honey heat level by increasing or decreasing sriracha and red pepper flakes.
