Ingredients

  • 2 tablespoons avocado oil
  • pounds ground beef
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 12 ounces cauliflower rice (fresh or frozen)
  • 1 medium green bell pepper, chopped
  • 1/2 medium red or orange bell pepper, chopped
  • 1/2 cup diced tomatoes
  • 1 tablespoon tomato paste
  • 2 tablespoons water
  • 1½ cups shredded mozzarella cheese

Instructions

  1. In a large 12-inch skillet over medium heat, heat avocado oil. Add ground beef, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook, breaking up the meat, until browned.
  2. Stir in cauliflower rice, chopped green and red/orange peppers, diced tomatoes, tomato paste, and water. Mix well.
  3. Bring to a simmer, then reduce heat to medium-low. Cook for about 10 minutes, until vegetables are tender.
  4. Sprinkle shredded mozzarella evenly over the top. Cover with a lid and cook for 3–4 more minutes, until cheese is melted.
  5. Serve hot and enjoy!
