- For the Sugar-Free Berry Syrup:
- 1 ½ cups fresh raspberries (180g)
- 1 cup water (236.59ml)
- ½ cup sweetener (95g, allulose recommended)
- For the Italian Soda:
- Club soda
- ¼ cup heavy cream (59.15ml)
Instructions
- Make the Sugar-Free Berry Syrup: In a medium saucepan over medium heat, combine the raspberries, water, and sweetener. Bring to a simmer and cook for about 5 minutes until the berries are soft enough to mash.
- Remove from heat and strain the syrup through a fine mesh sieve to remove the seeds. Press on the solids to release as much juice as possible.
- Assemble the Italian Soda: Fill a highball glass with ice. Add club soda to fill the glass about 2 inches from the top. Pour in ¼ cup raspberry syrup and stir in 1 tablespoon heavy cream. Optionally, top with lightly sweetened whipped cream for extra richness.

- Sweetener: You can use your preferred low-carb sweetener. Allulose is recommended for its sweetness and consistency, but stevia or erythritol work well too.
- Serving Tips: If you want to make a larger batch, just double or triple the syrup and store the leftover syrup in the fridge for up to a week.
