Ingredients
- For the Skillet:
- ½ onion, diced
- 1 lb ground beef
- 15 oz can diced tomatoes
- 1 ½ cups mixed veggies (peas and carrots)
- ¾ cup white rice
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp garlic salt
- ½ tsp black pepper
- 1 ½ cups mozzarella cheese (shredded)

Instructions
- Cook the Beef: In a large skillet, brown the ground beef and diced onion until the beef is no longer pink. Drain any excess fat.
- Add the Ingredients: Return the skillet to the stovetop and add the canned tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil, and pepper. Stir everything together and bring to a light boil.
- Simmer: Once boiling, reduce the heat to a simmer, cover, and cook for about 17 minutes, or until the rice is tender and has absorbed the broth.
- Add Cheese: Fluff the rice with a fork and sprinkle the shredded mozzarella cheese on top. Cover the skillet again for about 3 minutes to allow the cheese to melt.
- Serve: Optional: Sprinkle with parsley for extra flavor and color. Serve hot and enjoy!
Notes
- For a richer flavor, you can use chicken or vegetable broth instead of beef broth.
- If you prefer extra veggies, feel free to add some chopped bell peppers or zucchini.
- For a spicier kick, consider adding red pepper flakes or a dash of hot sauce to the skillet.
