Ingredients

  • For the Skillet:
  • ½ onion, diced
  • 1 lb ground beef
  • 15 oz can diced tomatoes
  • 1 ½ cups mixed veggies (peas and carrots)
  • ¾ cup white rice
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp garlic salt

Instructions

  1. Cook the Beef: In a large skillet, brown the ground beef and diced onion until the beef is no longer pink. Drain any excess fat.
  2. Add the Ingredients: Return the skillet to the stovetop and add the canned tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil, and pepper. Stir everything together and bring to a light boil.
  3. Simmer: Once boiling, reduce the heat to a simmer, cover, and cook for about 17 minutes, or until the rice is tender and has absorbed the broth.
  4. Add Cheese: Fluff the rice with a fork and sprinkle the shredded mozzarella cheese on top. Cover the skillet again for about 3 minutes to allow the cheese to melt.
  5. Serve: Optional: Sprinkle with parsley for extra flavor and color. Serve hot and enjoy!
