A comforting and easy one-pan meal with ground beef, rice, mixed veggies, and melted mozzarella cheese, all simmered together in a savory broth.

  • Total Time: 27 minutes
  • Yield: 6 servings

Ingredients

  • For the Skillet:
  • ½ onion, diced
  • 1 lb ground beef
  • 15 oz can diced tomatoes
  • 1 ½ cups mixed veggies (peas and carrots)
  • ¾ cup white rice
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp garlic salt
  • <li½ tsp=”” dried=”” basil<=”” li=””>

  • ½ tsp black pepper
  • 1 ½ cups mozzarella cheese (shredded)
  • </li½>

Instructions

  1. Cook the Beef: In a large skillet, brown the ground beef and diced onion until the beef is no longer pink. Drain any excess fat.
  2. Add the Ingredients: Return the skillet to the stovetop and add the canned tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil, and pepper. Stir everything together and bring to a light boil.
  3. Simmer: Once boiling, reduce the heat to a simmer, cover, and cook for about 17 minutes, or until the rice is tender and has absorbed the broth.
  4. Add Cheese: Fluff the rice with a fork and sprinkle the shredded mozzarella cheese on top. Cover the skillet again for about 3 minutes to allow the cheese to melt.
  5. Serve: Optional: Sprinkle with parsley for extra flavor and color. Serve hot and enjoy!

Notes

  • For a richer flavor, you can use chicken or vegetable broth instead of beef broth.
  • If you prefer extra veggies, feel free to add some chopped bell peppers or zucchini.
  • For a spicier kick, consider adding red pepper flakes or a dash of hot sauce to the skillet.
