Ingredients

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 2/3 cup (55g) natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 tablespoon (15ml) milk (any kind)
  • 1 1/4 cups (225g) white chocolate chips, plus extra for topping (optional)

Instructions

  1. In a large bowl, beat butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy, about 2–3 minutes.
  2. Add egg and vanilla; beat on high until well combined, scraping down the bowl as needed.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually mix dry ingredients into wet on low speed until just combined.
  5. Beat in milk, then fold in white chocolate chips. Dough will be thick and sticky.
  6. Cover and chill dough in the refrigerator for at least 3 hours or overnight for best results.
  7. Remove dough from fridge and let sit at room temperature for 10–20 minutes.
  8. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  9. Scoop heaping 1.5-tablespoon portions of dough and roll into tall balls. Place 2–3 inches apart on baking sheets.
  10. Bake for 11–12 minutes, or until edges are set and centers look soft. If not spreading by minute 9, bang the pan on the counter and return to oven.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
