Ingredients

  • ½ cup light brown sugar, packed
  • ½ cup ketchup
  • ½ cup soy sauce (preferably reduced sodium)
  • ½ cup chicken broth
  • 1 teaspoon fresh ginger root, minced
  • 2 cloves garlic, minced
  • 2 teaspoons rice vinegar
  • 2 teaspoons sesame oil
  • 12 boneless skinless chicken thighs (about 3 pounds)
  • Green onions, for garnish
  • Pineapple slices, for garnish

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the brown sugar, ketchup, soy sauce, and chicken broth. Stir in the minced ginger root, garlic, rice vinegar, and sesame oil. Set aside 1 cup of this marinade, cover it, and refrigerate to use for basting the chicken during cooking.
  2. Marinate the Chicken: Place the remaining marinade into a large freezer bag with the chicken thighs. Seal the bag and move the chicken around to evenly coat with the marinade. Refrigerate and marinate for at least 8 hours or overnight.
  3. Grill the Chicken: Preheat the grill and lightly oil the grates. Remove the chicken from the marinade and discard the used marinade. Place the chicken on the grill and cook for about 3 minutes on one side. Brush some of the reserved marinade on the chicken, flip it, and cook for another 3 minutes. Repeat this process until the chicken is fully cooked (about 10 minutes total, depending on grill heat). Ensure the internal temperature reaches 165°F.
  4. Serve: Once cooked, remove the chicken from the grill and garnish with green onions and pineapple slices. Serve immediately with your favorite sides like rice, stir-fried veggies, or grilled pineapple.

Notes

  • Do not reuse the marinade that the chicken was in for basting, as it is not safe to consume without cooking.
  • If you don’t have a grill, you can sear the chicken in a skillet with 1 tablespoon of oil, then bake it in a 375°F oven for 20 minutes.
  • If you prefer a stronger flavor, marinate the chicken for 24 hours.
  • This recipe also works well with chicken drumsticks or breasts, just adjust the cooking time.
