  • Total Time: 37 minutes
  • Yield: 8 servings

Ingredients

Biscuit Dough

  • 2 cups all-purpose flour
  • 1/2 cup medium grind cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 stick cold salted butter, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 cup whole milk
  • 2 teaspoons honey

Browned Honey Butter Topping

  • 4 tablespoons salted butter, divided
  • 1-2 teaspoons honey
  • 1 tablespoon fresh chopped thyme
  • 1 pinch sea salt

Instructions

  1. Preheat and prepare skillet: Preheat your oven to 425°F (220°C). Generously rub a 10-inch cast iron skillet with butter to prevent sticking and add flavor.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, garlic powder, and salt. Mix well to evenly distribute.
  3. Incorporate butter and cheese: Using your hands, mix in the shredded cold butter and grated Parmesan cheese until the mixture resembles coarse crumbs.
  4. Add wet ingredients and combine dough: Pour in the whole milk and honey. Stir until just combined to form a soft dough, being careful not to overmix.
  5. Fold and shape dough: Turn the dough onto a floured surface. Pat it into a 1-inch thick rectangle. Fold one side into the center, then the other side over it like a letter. Turn the dough horizontally and flatten into a rectangle again. Repeat the folding once more, turn horizontally a final time, and flatten into a 3/4-inch thick rectangle.
  6. Cut biscuits: Use a 3-inch biscuit cutter to cut circles from the dough. Gently re-roll the remaining dough and cut additional biscuits.
  7. Arrange in skillet and bake: Arrange the biscuits snugly in the prepared cast iron skillet. Brush the tops with a little milk. Dot 2 tablespoons of salted butter around the biscuits. Bake in the oven for 20-22 minutes until golden brown and cooked through.
  8. Make browned honey butter: While the biscuits bake, melt the remaining 2 tablespoons of butter in a small saucepan over low heat. Cook until the butter is lightly browned and fragrant, about 5 minutes. Remove from heat and stir in honey, chopped thyme, and a pinch of sea salt.
  9. Serve: Remove the biscuits from the oven and generously brush or drizzle them with the browned honey butter mixture. Garnish with additional fresh thyme if desired. Serve warm for best flavor.

Notes

  • Use cold butter shredded like cheese for flakier biscuits.
  • Do not overmix the dough to keep biscuits tender.
  • Folding the dough creates layers for flakiness.
  • The browned honey butter adds a rich, sweet-savory topping.
  • Fresh thyme complements the garlic and Parmesan flavors beautifully.
  • Serve immediately for best texture and taste.
