Ingredients
- 2 cups granulated sugar
- 1/4 cup corn syrup
- 1/2 cup water
- 1/2 cup heavy cream
- 2 tablespoons salted butter, room temperature
- 6 Granny Smith apples
Instructions
- In a medium saucepan, combine sugar, corn syrup, and water. Stir to combine.
- Cook over medium-high heat, stirring until the sugar is dissolved.
- Continue cooking without stirring, swirling the pan occasionally, until the mixture turns light amber in color and reaches 320°F (about 8–10 minutes).
- Remove from heat and carefully whisk in the heavy cream. The mixture will bubble vigorously.
- Whisk in the butter until smooth.
- Return the pan to low heat and stir until the caramel is fully smooth and thickened, about 1–2 minutes.
- Let the caramel cool for 2–3 minutes, until it’s thick enough to coat a spoon.
- Insert sticks into the stem ends of the apples.
- Dip each apple into the caramel, turning to coat evenly. Let excess drip off.
- Place coated apples on a parchment-lined baking sheet sprayed with cooking spray.
- Decorate as desired or serve plain. Let cool and set before eating.
