Ingredients
For the Halloumi:
- 1 tsp Sunflower oil
- 400 g (14 oz) Halloumi (2 packs)
For the Sticky Sauce:
- 2 tbsp Honey
- 2 tbsp Sweet chilli sauce
- 2 tbsp Ketchup
To Serve:
- 2 Little gem lettuces, finely shredded
- 1/2 Red onion, thinly sliced
- 250 g (9 oz) Cherry tomatoes, halved
- 1/2 Cucumber, thinly sliced
- 120 g (4 oz) Hummus
- 1 Lime
- 8 Small tortilla wraps
Instructions
- Make the sticky sauce: In a small bowl, combine the honey, sweet chilli sauce, and ketchup until well mixed to create a flavorful sticky sauce.
- Prepare the halloumi: Cut each of the two blocks of halloumi into 8 even slices for a total of 16 slices.
- Fry the halloumi: Heat the sunflower oil in a pan over high heat. Once hot, add the halloumi slices carefully and cook without moving much for 3-5 minutes on each side until golden brown and crispy.
- Coat halloumi in sauce: Pour the sticky sauce into the pan with the fried halloumi. Turn the halloumi slices so each side is fully coated in the sauce, cooking for an additional 2-3 minutes until the sauce has warmed and slightly thickened.
- Warm the wraps: If preferred, warm the tortilla wraps by microwaving, heating wrapped in foil in a low oven, or toasting carefully over an open gas flame for extra texture and color.
- Assemble the wraps: Spread hummus evenly over each warmed wrap. Add shredded lettuce, cherry tomatoes, red onion slices, and cucumber. Top with the sticky glazed halloumi pieces.
- Finish and serve: Squeeze fresh lime juice over the assembled wraps for a fresh, tangy finish, then roll up and enjoy immediately.
Notes
- For a spicier kick, add some chopped fresh chillies or a sprinkle of chilli flakes to the sauce.
- You can substitute sunflower oil with olive oil if preferred.
- To keep wraps warm longer, wrap them in foil after heating.
- These wraps can be customized by adding avocado, fresh herbs like coriander, or other vegetables of choice.
- Use gluten-free tortillas for a gluten-free version.
