Ground Beef Mixture
- 2 pounds ground beef
- 1 ounce packet of onion soup and dip mix
Casserole Base
- 10.5 ounce can of cream of condensed chicken soup
- 10.5 ounce can of cream of condensed cheese soup
- ½ cup sour cream
- 1½ cups instant rice
- 1 cup chicken or beef broth
Cheese Topping
- 2½ cups shredded cheddar cheese, divided
Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Brown the Beef: In a large skillet over medium heat, add the ground beef and onion soup mix. Cook until the beef is browned and fully cooked, then drain off any excess grease to keep the casserole from becoming too oily.
- Add Creamy Ingredients: Stir in the cream of chicken soup, cream of cheese soup, and sour cream into the skillet with the beef until well combined and creamy.
- Mix in Broth and Rice: Pour the chicken or beef broth into the skillet, then add the instant rice and 2 cups of shredded cheddar cheese. Stir thoroughly to evenly distribute all ingredients.
- Assemble the Casserole: Transfer the beef and rice mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining ½ cup shredded cheddar cheese evenly over the top.
- Bake Covered: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes, allowing the flavors to meld and the rice to cook fully.
- Bake Uncovered: Remove the foil and continue baking for an additional 10–15 minutes until the cheese topping is melted and bubbly with a golden crust.
- Serve: Remove from oven and let the casserole rest for a few minutes before serving to allow it to set slightly, making it easier to dish out.

- Use instant rice for quicker preparation; regular rice would require pre-cooking.
