Ingredients

  • For the Mint Filling:
  • 1/3 cup light corn syrup
  • 5 tablespoons butter, softened
  • 1 ½ teaspoons mint extract
  • ½ teaspoon salt
  • Green food coloring (start with a couple drops and add more to reach desired color)
  • 45 cups powdered sugar
  • For the Chocolate Coating:
  • 10 oz chocolate candy coating (such as CandiQuik)

Instructions

  1. Make the Mint Filling: In a medium-sized bowl, combine corn syrup, butter, mint extract, salt, and food coloring. Stir until well combined.
  2. Add Powdered Sugar: Gradually stir in 1 cup of powdered sugar at a time until the mixture becomes too stiff to stir. Continue adding powdered sugar and knead the mixture until it no longer sticks to your hands.
  3. Shape the Patties: Roll the mixture into 1-inch balls and place them on a baking sheet lined with waxed paper. Flatten each ball with a flat-bottomed cup or your hand. Cover with another sheet of waxed paper and refrigerate for 60–90 minutes or until firm.
  4. Dip in Chocolate: Melt the chocolate candy coating according to package directions. Using a fork, dip each mint patty into the melted chocolate, tapping off the excess. Place the coated patties back on the waxed paper.
  5. Set and Store: Let the candies cool until the chocolate is firm. Store them in an airtight container. For longer storage, freeze them in single layers, separated by waxed paper.
