Instructions

- Incorporate liquids: Gradually pour in the vegetable or chicken broth and skim milk, whisking continuously to combine everything into a smooth mixture without clumps.
- Simmer and thicken: Increase the heat to medium-high and bring the sauce to a gentle simmer. Whisk constantly and let it cook for about 2 minutes until it begins to thicken.
- Add Greek yogurt: Remove the pan from heat and slowly whisk in the room temperature Greek yogurt a little at a time to prevent curdling and ensure a creamy texture.
- Season and finish sauce: Return the pan to medium heat. Stir in the freshly grated Parmesan cheese, salt, black pepper, and Italian seasoning until well combined.
- Final simmer: Bring the sauce back to a simmer and cook for an additional 2 minutes while whisking constantly to fully meld the flavors and thicken the sauce.
