Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Reserve a few tablespoons of the pasta water before draining.
  2. Sauté mushrooms and onions: In a skillet over medium-high heat, add olive oil and 1 tablespoon of butter. When hot, add the chopped onions and sliced mushrooms. Cook, stirring occasionally, until the mushrooms release their water and it evaporates, and everything is nicely browned and caramelized, about 8-10 minutes.
  3. Add garlic and mustard: Stir in the remaining 2 tablespoons of butter, minced garlic, and Dijon mustard. Cook for about 1 minute until fragrant.
  4. Add broth and lemon: Pour in the chicken or vegetable broth, along with the lemon juice and zest. Let the mixture bubble for about 1 minute to meld the flavors.
  5. Finish the sauce and combine: Remove the skillet from heat and stir in the grated parmesan cheese and chopped parsley. Add a splash of reserved hot pasta water to loosen the sauce if needed. Toss the drained pasta in the skillet with the sauce to coat evenly. Season with salt and pepper to taste, then serve immediately.
