Ingredients
Salmon and Seasoning
- 2 pounds side of salmon, boneless and skinless
- salt and pepper, to taste
- 1/4 cup chopped fresh Italian parsley
- 1/4 cup thinly sliced green onions
Garlic Butter Sauce
- 4 tablespoons butter
- 8 cloves garlic, peeled and roughly chopped
- 1/4 cup dry white wine
- 2 tablespoons freshly squeezed lemon juice
- Extra lemon wedges, for serving
Instructions
- Preheat Oven or Grill: Heat your oven to 375°F (190°C) or preheat your grill to medium heat, preparing for cooking the salmon.
- Prepare Foil: Line a large baking dish with a large piece of aluminum foil to contain the fish and sauce.
- Make Garlic Butter Sauce: In a small saucepan over medium-high heat, melt the butter. Add the chopped garlic and cook for 1-2 minutes until fragrant but not fully cooked. Remove from heat, then stir in the dry white wine and freshly squeezed lemon juice.
- Coat Foil and Salmon: Using a pastry brush, spread a few tablespoons of the garlic butter mixture evenly over the foil. Lay the salmon on top, then pour the remaining butter-garlic sauce over the salmon, brushing it around to cover the fish thoroughly. Season the salmon generously with salt and pepper.
- Seal the Packet: Fold the foil edges up and over the salmon, sealing completely to form a foil packet. Use a second piece of foil if needed to fully enclose the fish and sauce.
- Bake Method: Place the foil packet in the oven and bake for 14-15 minutes, until salmon is nearly cooked through. Carefully open the foil to expose the top of the salmon, watch for hot steam. Switch the oven to broil and return the salmon to broil for 3-4 minutes, until the top and garlic turn lightly golden and the fish is fully cooked.
- Grill Method: Transfer the foil packet carefully to the grill. Cook for 12-14 minutes until almost cooked through. Open the foil carefully to expose the top of the salmon, then cook uncovered for 3-4 more minutes until the top and garlic are slightly golden and salmon is cooked through.
- Serve: Remove the salmon from heat, sprinkle with fresh parsley and green onions. Serve immediately with additional lemon wedges.
Notes
- Cooking times may vary depending on the thickness of the salmon; thinner fillets require less time.
- Be cautious when opening the foil packet as hot steam will be released.
- Broiling/grilling in the final step adds a delicious golden finish and enhances garlic flavor.
- This recipe works well with either boneless skinless salmon sides or large fillets.
- Use dry white wine like Sauvignon Blanc or Pinot Grigio for best flavor.
- Fresh garlic is preferred for a rich robust flavor but can be adjusted to taste.
