Ingredients

  • Pizza Base (choose one):
  • 1 classic pizza dough (wood-fired Italian style)
  • OR 1 fast no-yeast pizza dough
  • OR 1 store-bought pizza base
  • Garlic Cheese Topping:
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic (from 23 large cloves), crushed or made into a paste
  • 1/8 teaspoon kosher salt (or table salt, or double if using salt flakes)
  • 1 cup mozzarella cheese, freshly shredded
  • 1/2 cup parmesan cheese, freshly shredded

Instructions

  1. Preheat oven to 480°F (250°C), or 450°F (230°C fan). Allow it to fully preheat.
  2. In a small bowl, combine olive oil and garlic. Let sit for 10 minutes to infuse.
  3. Prepare your pizza base and stretch it onto a pan or baking sheet.
  4. Spread the garlic-infused oil (with all garlic) over the dough, leaving the edges bare.
  5. Sprinkle with salt, then layer parmesan and mozzarella evenly over the top.
  6. If using a no-yeast base, lightly brush the exposed crust with olive oil.
  7. Bake for 8 minutes, turning halfway through, until the cheese has golden spots and the crust is crisp.
  8. Slice and serve immediately while hot and melty.

  • Freshly shredded cheese melts better and creates a more flavorful topping.
  • Use crushed garlic or garlic paste for a smooth, even flavor.
