Ingredients
- 8 tablespoons unsalted butter
- 10 ounces mini marshmallows
- 1 1/2 cups Funfetti cake mix
- 6 cups Rice Krispies® cereal
- 2 tablespoons rainbow sprinkles
Instructions
- Prepare a 9×13-inch baking dish by spraying it with cooking spray or lining with parchment paper.
- In a large saucepan, melt the butter and mini marshmallows over medium heat, stirring until smooth.
- Reduce heat to low and stir in the Funfetti cake mix until just combined.
- Add half of the Rice Krispies and 1 tablespoon of rainbow sprinkles. Stir to combine.
- Add the remaining Rice Krispies and stir until everything is fully incorporated.
- Transfer the mixture into the prepared baking dish and press evenly into the pan.
- Top with the remaining 1 tablespoon of sprinkles and gently press them into the surface.
- Allow the bars to cool completely at room temperature before slicing and serving.
Notes
- Use fresh marshmallows for best texture and flavor.
- For cleaner cuts, lightly grease your knife or use a serrated knife once bars are set.
- Store in an airtight container at room temperature for up to 3 days.
- To make them extra gooey, reserve 1 cup of marshmallows to stir in with the cereal at the end.
