Ingredients
- For the Pancakes:
- 1 1/2 cups 2% milk
- 1/4 cup vegetable oil
- 2 eggs (separated)
- 1 1/2 cups funfetti cake mix
- 1 cup all-purpose flour
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- For the Frosting:
- 2 tablespoons butter
- 1 cup powdered sugar
- 2–4 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
- Optional:
- Sprinkles (for topping)
Instructions
- Make the Pancake Batter: In a bowl (or large liquid measuring cup), whisk together the milk, vegetable oil, and egg yolks.
- In a separate bowl, beat the egg whites with a hand mixer (or whisk vigorously by hand) until stiff peaks form.
- In a large bowl, whisk together the cake mix, flour, baking powder, and salt.
- Pour the wet ingredients into the dry ingredients and stir to combine.
- Gently fold in 1/4 of the egg whites until there are few white streaks. Then, gently fold in the remaining egg whites.
- Cook the Pancakes: Heat a griddle or skillet over medium-high heat and spray with nonstick cooking spray (or butter).
- Pour 1/3 cup of batter onto the hot griddle for each pancake.
- Cook until the batter starts to bubble and the bottom is browned, then flip and cook the other side until browned and the pancake is cooked through. Repeat with the remaining batter.
- Make the Frosting: In a medium microwave-safe bowl, melt the butter in the microwave.
- Add the powdered sugar, 2 tablespoons of heavy cream, and vanilla extract to the melted butter. Whisk to combine.
- Add more cream as needed to achieve a pourable consistency.
- Serve: Stack the pancakes on a plate, drizzle with the frosting, and top with sprinkles.
Notes
- For extra fun, use multicolored sprinkles or mix them into the pancake batter as well!
- If you prefer a lighter frosting, use less powdered sugar or add a little milk instead of heavy cream.
- These pancakes are best served fresh but can be reheated in the microwave for about 20 seconds.
