Instructions
- Preheat and Prepare: Preheat your oven to 375℉ and prepare your muffin tins by placing muffin liners or spraying them with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, and salt until well combined. Set aside for later.
- Soften Butter: Place the butter in a medium bowl and microwave for 20-25 seconds until it is soft and mostly melted, making it easier to combine with the other wet ingredients.
- Combine Wet Ingredients: To the softened butter, add the olive or avocado oil, Greek yogurt, milk, egg, and vanilla extract. Whisk gently until all ingredients are well incorporated, taking care not to overmix.
- Combine Wet and Dry: Pour the wet ingredient mixture into the bowl with the dry ingredients. Using a spatula or large spoon, stir just until combined; do not overmix to keep the muffins tender. Gently fold in the rainbow sprinkles.
- Fill Muffin Cups: Spoon the batter into the muffin cups, filling each almost to the top. Optionally, sprinkle a few extra rainbow sprinkles on top for decoration.
- Bake: Bake in the preheated oven for 15-17 minutes. Check doneness by inserting a toothpick into the center of a muffin; it should come out clean when done. About 15 minutes works well but ovens may vary.
- Cool: Let the muffins cool in the muffin tin for 5-10 minutes before removing them. For easier removal when using liners, allow the muffins to cool completely.
