These Funfetti Cake Pops are delightful bite-sized treats perfect for celebrations and parties. Made from a classic Funfetti cake, combined with creamy vanilla frosting to hold the mixture together, then dipped in smooth white chocolate and topped with colorful rainbow sprinkles, these pops are as fun to make as they are to eat. They offer a sweet, festive treat sure to please kids and adults alike.

  • Total Time: 2 hours 10 minutes
  • Yield: 32 cake pops

Ingredients

Cake

  • 1 box funfetti cake mix plus eggs, oil, and water, as directed on the package

Frosting

  • 1/3 cup vanilla frosting

Coating and Decoration

  • 24 ounces white chocolate candy melts
  • 1 teaspoon vegetable oil
  • 32 lollipop sticks
  • 1/3 cup rainbow sprinkles

Instructions

  1. Preheat and Prepare Cake: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan. Prepare the funfetti cake batter according to the package instructions by mixing the cake mix with eggs, oil, and water.
  2. Bake the Cake: Pour the batter evenly into the greased pan and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and allow the cake to cool completely for approximately 1 hour.
  3. Crumble the Cake: Once cooled, crumble the cake into a large mixing bowl using your hands until finely broken down.
  4. Add Frosting: Gradually mix in the 1/3 cup vanilla frosting into the crumbled cake until the mixture is moist and holds together well but is not overly sticky.
  5. Form Cake Balls: Scoop about 1 tablespoon of the mixture and roll it between your palms to form balls roughly 1 inch in diameter. Arrange the balls on a tray and place them in the freezer for 30 minutes to firm up.
  6. Melt Chocolate Coating: In a microwave-safe bowl, melt the white chocolate candy melts with 1 teaspoon vegetable oil using 30-second intervals, stirring between each until smooth and fully melted.
  7. Insert Lollipop Sticks: Dip the tip of each lollipop stick into the melted chocolate, then insert it halfway into a cake ball. This helps secure the stick inside the cake pop.
  8. Coat Cake Pops: Dip each cake ball into the melted white chocolate until fully coated. Tap gently to remove any excess chocolate drip.
  9. Add Sprinkles and Set: Immediately sprinkle with rainbow sprinkles while the coating is still wet. Stand the pops upright in a styrofoam block or a suitable holder to allow the chocolate coating to set completely.

Notes

  • Ensure the cake is completely cooled before crumbling to prevent a gummy texture.
  • Freezing the cake balls before dipping helps them hold together and makes dipping easier.
  • You can swap the white chocolate candy melts for colored melts for variation.
  • If the melted chocolate starts to harden while working, gently reheat in short bursts.
  • Store finished cake pops in an airtight container in the refrigerator to keep fresh.
