Ingredients
Cake
- 1 box funfetti cake mix plus eggs, oil, and water, as directed on the package
Frosting
- 1/3 cup vanilla frosting
Coating and Decoration
- 24 ounces white chocolate candy melts
- 1 teaspoon vegetable oil
- 32 lollipop sticks
- 1/3 cup rainbow sprinkles
Instructions
- Preheat and Prepare Cake: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan. Prepare the funfetti cake batter according to the package instructions by mixing the cake mix with eggs, oil, and water.
- Bake the Cake: Pour the batter evenly into the greased pan and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and allow the cake to cool completely for approximately 1 hour.
- Crumble the Cake: Once cooled, crumble the cake into a large mixing bowl using your hands until finely broken down.
- Add Frosting: Gradually mix in the 1/3 cup vanilla frosting into the crumbled cake until the mixture is moist and holds together well but is not overly sticky.
- Form Cake Balls: Scoop about 1 tablespoon of the mixture and roll it between your palms to form balls roughly 1 inch in diameter. Arrange the balls on a tray and place them in the freezer for 30 minutes to firm up.
- Melt Chocolate Coating: In a microwave-safe bowl, melt the white chocolate candy melts with 1 teaspoon vegetable oil using 30-second intervals, stirring between each until smooth and fully melted.
- Insert Lollipop Sticks: Dip the tip of each lollipop stick into the melted chocolate, then insert it halfway into a cake ball. This helps secure the stick inside the cake pop.
- Coat Cake Pops: Dip each cake ball into the melted white chocolate until fully coated. Tap gently to remove any excess chocolate drip.
- Add Sprinkles and Set: Immediately sprinkle with rainbow sprinkles while the coating is still wet. Stand the pops upright in a styrofoam block or a suitable holder to allow the chocolate coating to set completely.
Notes
- Ensure the cake is completely cooled before crumbling to prevent a gummy texture.
- Freezing the cake balls before dipping helps them hold together and makes dipping easier.
- You can swap the white chocolate candy melts for colored melts for variation.
- If the melted chocolate starts to harden while working, gently reheat in short bursts.
- Store finished cake pops in an airtight container in the refrigerator to keep fresh.
