Ingredients
- For the Turkey Cutlets:
- 1 ½ pounds turkey cutlets (about 4 cutlets)
- ⅔ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon poultry seasoning
- ½ teaspoon black pepper
- 1 egg
- 1 tablespoon water
- 1 cup Panko bread crumbs
- ⅔ cup parmesan cheese (grated)
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions
- Prepare the Breading Station: Preheat the oven to 350°F. In a large bowl or plate, mix the flour, salt, poultry seasoning, and black pepper. Set aside. In a second bowl, beat the egg and water together. Set aside. In a third large bowl or plate, combine the Panko bread crumbs and parmesan cheese.
- Bread the Turkey Cutlets: Dip each turkey cutlet in the following order: First, coat in the flour mixture. Then dip in the egg wash. Finally, press into the Panko and parmesan mixture, ensuring the breading is well-coated on all sides. Set the breaded turkey cutlets aside.
- Cook the Turkey Cutlets: In a large cast iron or heavy skillet, heat the butter and olive oil over medium heat until the butter is melted and bubbling. Add the breaded turkey cutlets (about two at a time) and cook for 3-4 minutes per side, until golden and crispy.
- Finish Cooking in the Oven: Transfer the browned turkey cutlets to a baking sheet. Cook the remaining cutlets in the skillet. Once all cutlets are browned, transfer the baking sheet to the oven and bake for about 10 minutes, or until the internal temperature reaches 160°F. If your cutlets are thin (less than ½ inch), you may be able to finish cooking them entirely on the stove top.
- Serve: Serve the fried parmesan turkey cutlets warm and enjoy!

- For an extra crispy texture, you can add an additional layer of breading by dipping the cutlets back in the egg wash and Panko mixture.
- If you’re looking to lighten up the recipe, you can try baking the cutlets in the oven after breading, instead of frying them.
