Breadsticks
- 1 cup (237 g) water, warmed (about 110°-115°F)
- 1 teaspoon active dry yeast
- 2 tablespoons granulated sugar
- ⅓ cup (75 g) extra virgin olive oil
- 1 tablespoon Italian seasoning
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- 2 ½ cups (312.5 g) all-purpose flour
Topping
- 2 teaspoons extra virgin olive oil, divided
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ cup (25 g) parmesan cheese, grated
Instructions
- Bloom the Yeast: In a large bowl, combine the warmed water, active dry yeast, and granulated sugar. Let this mixture rest for about 5 minutes until the yeast is foamy and activated.
- Prepare Oil Mixture: In a small bowl, whisk together the extra virgin olive oil, Italian seasoning, minced garlic, and kosher salt. This mixture will add flavor to the dough and the breadsticks.
- Combine Dough Ingredients: Pour half of the oil mixture into the yeast mixture. Then add the all-purpose flour. Stir everything together until a dough forms.
- First Rise: Place the dough in a greased bowl and cover it with a clean towel. Let it rest in a warm spot for 1 hour, or until it doubles in size.
- Preheat Oven and Prepare Pan: Preheat your oven to 450°F (232°C). Pour the remaining oil mixture into a 7×11-inch baking dish and use a pastry brush to coat the bottom evenly.
- Shape the Dough: Transfer the risen dough to the prepared baking dish. Stretch and press the dough to the edges of the dish. Use your fingers to create dimples on the dough’s surface.
- Slice the Breadsticks: Using a pizza cutter or sharp knife, make 3 equally spaced cuts across the short side of the dough, then slice down the center lengthwise, creating a total of 8 breadsticks.
- Add Topping and Bake: Brush the top of the dough with 1 teaspoon of olive oil. Sprinkle evenly with garlic powder and kosher salt. Bake for 18-20 minutes or until golden brown.
- Finish and Serve: Immediately after baking, brush the breadsticks with the remaining olive oil and sprinkle grated parmesan cheese over the top. Serve warm for best flavor and texture.
