Ingredients
Dough
- 3 1/2 cups bread flour (420 g), sifted and leveled
- 2 tsp instant yeast
- 2 Tbsp sugar
- 1 tsp salt
- 1 1/3 cup fat free Greek yogurt (333 g), plain or unsweetened, drained of excess liquid
- 1/2 cup plus 2 Tbsp water or milk of choice
Filling
- 3 Tbsp brown sugar (or granulated monk fruit sweetener)
- 1 Tbsp cinnamon powder
Glaze
- 1 cup powdered sugar (or powdered monk fruit sweetener)
- 2 Tbsp milk of choice
Instructions
- Mix dry ingredients: In the bowl of a stand mixer, combine bread flour, instant yeast, sugar, and salt thoroughly.
- Add Greek yogurt: Add the drained fat free Greek yogurt to the dry mixture to begin forming the dough.
- Knead dough: Start kneading at low speed (speed 2), adding 1/2 cup water. Add more water a tablespoon at a time if dough is too dry. Knead until dough is soft and slightly sticky but maintains shape.
- Continue kneading: Knead for 8-10 minutes until dough pulls away from bowl and forms a soft, stretchy ball with slight bumps.
- First rise: Transfer dough to a lightly greased bowl, cover, and let rise until doubled in size, about 60-90 minutes.
- Prepare filling: While dough rises, mix together brown sugar and cinnamon for the filling and set aside.
- Roll out dough: Punch down dough and place on a floured surface. Roll into an 18 x 10 inch rectangle.
- Moisten surface: Lightly spray, brush, or sprinkle water or almond milk onto dough surface to help filling adhere.
- Add filling: Evenly spread the cinnamon sugar filling over the moistened dough surface.
- Shape rolls: Starting from the long edge, roll dough tightly into a log and pinch seams to seal.
- Cut individual rolls: Use dental floss or string to cut the log into 12 equal rolls.
- Prepare baking pan: Line a 9″ x 12″ or quarter sheet pan with parchment paper and arrange rolls swirl-side up about half an inch apart.
- Second rise: Cover and let rolls rise for 30 minutes until puffy. Preheat oven to 350°F (180°C) towards the end of this time.
- Bake: Bake rolls for 15-20 minutes until golden brown on top.
- Make glaze: Mix powdered sugar with milk to desired consistency for a light glaze.
- Glaze rolls: When rolls are cool enough to handle, drizzle glaze over the top.
- Serve: Enjoy these delicious, fat free Greek yogurt cinnamon rolls fresh and warm.
