These Fat Free Greek Yogurt Cinnamon Rolls are a healthier twist on a classic treat, made with a soft and tender dough using fat free Greek yogurt for moisture and tang. Baked on a sheet pan for easy preparation, these cinnamon rolls combine a sweet cinnamon filling with a light glaze, perfect for breakfast or dessert.

  • Total Time: 3 hours 20 minutes
  • Yield: 12 servings

Ingredients

Dough

  • 3 1/2 cups bread flour (420 g), sifted and leveled
  • 2 tsp instant yeast
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 1/3 cup fat free Greek yogurt (333 g), plain or unsweetened, drained of excess liquid
  • 1/2 cup plus 2 Tbsp water or milk of choice

Filling

  • 3 Tbsp brown sugar (or granulated monk fruit sweetener)
  • 1 Tbsp cinnamon powder

Glaze

  • 1 cup powdered sugar (or powdered monk fruit sweetener)
  • 2 Tbsp milk of choice

Instructions

  1. Mix dry ingredients: In the bowl of a stand mixer, combine bread flour, instant yeast, sugar, and salt thoroughly.
  2. Add Greek yogurt: Add the drained fat free Greek yogurt to the dry mixture to begin forming the dough.
  3. Knead dough: Start kneading at low speed (speed 2), adding 1/2 cup water. Add more water a tablespoon at a time if dough is too dry. Knead until dough is soft and slightly sticky but maintains shape.
  4. Continue kneading: Knead for 8-10 minutes until dough pulls away from bowl and forms a soft, stretchy ball with slight bumps.
  5. First rise: Transfer dough to a lightly greased bowl, cover, and let rise until doubled in size, about 60-90 minutes.
  6. Prepare filling: While dough rises, mix together brown sugar and cinnamon for the filling and set aside.
  7. Roll out dough: Punch down dough and place on a floured surface. Roll into an 18 x 10 inch rectangle.
  8. Moisten surface: Lightly spray, brush, or sprinkle water or almond milk onto dough surface to help filling adhere.
  9. Add filling: Evenly spread the cinnamon sugar filling over the moistened dough surface.
  10. Shape rolls: Starting from the long edge, roll dough tightly into a log and pinch seams to seal.
  11. Cut individual rolls: Use dental floss or string to cut the log into 12 equal rolls.
  12. Prepare baking pan: Line a 9″ x 12″ or quarter sheet pan with parchment paper and arrange rolls swirl-side up about half an inch apart.
  13. Second rise: Cover and let rolls rise for 30 minutes until puffy. Preheat oven to 350°F (180°C) towards the end of this time.
  14. Bake: Bake rolls for 15-20 minutes until golden brown on top.
  15. Make glaze: Mix powdered sugar with milk to desired consistency for a light glaze.
  16. Glaze rolls: When rolls are cool enough to handle, drizzle glaze over the top.
  17. Serve: Enjoy these delicious, fat free Greek yogurt cinnamon rolls fresh and warm.

Notes

  • Drain excess liquid from Greek yogurt to avoid overly wet dough.
  • Water amount may vary based on flour protein and yogurt moisture—add cautiously to get soft dough.
  • Use almond milk or other milk alternatives if preferred.
  • Sweetener alternatives like monk fruit products can be used in place of sugar for a lower glycemic option.
  • Allow rolls to cool slightly before glazing to prevent glaze from melting off.
  • Store leftovers in an airtight container and reheat gently before serving.
