A protein-rich, one-dish breakfast that’s quick, customizable, and delicious—this egg tortilla bake uses a tortilla as a crust and can be loaded up with your favorite veggies, cheeses, and seasonings.

Ingredients

  • Cooking spray or a little oil for greasing the baking dish
  • 1 tortilla (8–10 inches in diameter)
  • 3 large eggs
  • 1/3 cup cottage cheese
  • Salt, to taste
  • Black pepper, to taste

  • Diced tomatoes
  • Diced green peppers
  • Chopped spinach or arugula
  • 1/4 cup mozzarella cheese (or cheese of choice)
  • Flavor Option Two:
  • Diced tomatoes
  • Kalamata olives
  • Sliced red onions
  • Chopped spinach
  • Feta cheese
  • Mozzarella cheese
  • Flavor Option Three:
  • 1/4 cup chopped shallots
  • 2 cups fresh spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease the bottom and sides of a round baking dish or pie dish with oil or cooking spray.
  2. Place the tortilla flat into the dish to form a crust base.
  3. In a bowl, whisk together the eggs and cottage cheese. Add salt and pepper to taste.
  4. Pour the egg mixture evenly over the tortilla.
  5. Add your chosen toppings (Flavor Option One, Two, or Three), spreading evenly over the egg base.
  6. Bake for 20–25 minutes, or until the eggs are set and the top is golden.
  7. Let cool for a couple of minutes before slicing and serving.

Notes

  • Feel free to mix and match veggies and cheeses for your own flavor combinations.
  • Use whole wheat or low-carb tortillas for a healthier option.
  • Serve immediately for best texture, or store in the fridge for up to 2 days and reheat gently.
