This easy garlic dressing is bold, tangy, and creamy—perfect for garlic lovers. Made with fresh garlic, olive oil, lemon, and Parmesan, it’s a punchy and flavorful dressing that’s great on salads, veggies, or as a dip.

Ingredients

  • 6 fat cloves garlic
  • 2 tablespoons mayonnaise
  • 2 tablespoons red wine vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • ⅓ cup olive oil
  • ½ teaspoon dried oregano
  • 2 tablespoons freshly grated Parmesan
  • Salt and fresh cracked pepper, to taste

Instructions

  1. Mince the garlic finely and sprinkle with a bit of coarse salt.
  2. Using the back of a knife, smash the garlic into a paste by pressing and dragging repeatedly until soft and smooth.
  3. In a small mixing bowl, combine the garlic paste with mayonnaise and red wine vinegar.
  4. Squeeze in the juice of one lemon and add Dijon mustard. Whisk well to combine.
  5. Add the olive oil, dried oregano, and grated Parmesan. Whisk again until smooth and creamy.
  6. Taste and season with salt and cracked black pepper as needed.
  7. Adjust by adding more olive oil to mellow or more lemon/vinegar to increase tang.
