Dates and Filling

  • 10 medjool dates
  • 45 tablespoons creamy peanut butter
  • ¼ cup peanuts, chopped

Chocolate Coating

  • ½ cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Flaky sea salt, optional

Instructions

  1. Prepare the Dates: Use a paring knife to carefully slice each medjool date lengthwise down the middle, making sure not to cut all the way through. Remove and discard the pits, then place the pitted dates on a lined pan for filling.
  2. Fill the Dates: Fill each date about three-quarters full with creamy peanut butter. You can use a small spoon or place the peanut butter in a Ziplock bag, cut off one tip, and pipe it into the dates for easy filling.
  3. Add Peanuts and Freeze: Sprinkle the chopped peanuts on top of the peanut butter filled dates. Place the pan in the freezer for 30 minutes to allow the peanut butter to set, which helps when dipping in chocolate.
  4. Melt the Chocolate: Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely melted and smooth, approximately 90 seconds in total.
  5. Dip the Dates in Chocolate: Remove the dates from the freezer. Using two forks, carefully dip each date fully into the melted chocolate, letting excess drip off, then place them back on the lined pan. While the chocolate is still wet, sprinkle additional chopped peanuts and a pinch of flaky sea salt on top to enhance texture and flavor.
  6. Chill to Set: Refrigerate the chocolate-dipped dates for 10-15 minutes until the chocolate is firm and set. Serve and enjoy your delicious no-bake date snickers!
